Dadima's Lamingtons

Ingredients

½ lb Butter  
2 cups Dada's Castor Sugar
4 Eggs
3 cups Cake Flour
1 t Bicarbonate of soda
2 t Cream of Tartar
¾ cups Water
¾ cups Milk
500 g Dada's Desiccated Coconut (set aside for topping)

METHOD

1.   Cream Butter and sugar until fluffy.

2.   Add eggs one at a time and cream.

3.   Sift flour, cream of tartar and bicarbonate of soda together.

4.   Fold in sifted ingredients.

5.   Fold in milk and water mixture.

6.   Pour mixture into greased cup cake pans.

7.   You should obtain 36 medium cup cakes

8.   Bake in a pre-heated oven of 180º for 12 to 15 minutes.

Ingredients for Syrup

2 cups Boiling Water
4 oz Butter
3 cups Dada's Icing Sugar
4 t Dada's Cocoa

 

Bring above ingredients to boil until thick. Allow to cool.

Dip Cups into mixture and roll in desiccated coconut.

 

Dadima's Chocolate Cake

Ingredients

½ lb Butter / Margarine
2 cups Dada's Castor Sugar
6 Eggs
2½ cups Cake flour
6 t Dada's Baking powder
6 t Dada's Cocoa
1 cup Cold Milk
1 cup Cold Water
   

METHOD

1.   Beat butter and sugar until light and fluffy.

2.   Add eggs and beat.

3.   Sieve flour, baking powder and cocoa 3 times.

4.   Mix water and milk together.

5.   Add dry ingredients and milk and water mixture alternately.

6.   When mixture is well blended make sure to fold in by hand to give a light and fluffy finish.

7.   Grease oven pan with oil.

8.   Pour in mixture and bake in pre-heated oven of 180º for 35 to 40 minutes.

Chocolate Icing

½ lb Butter
2 cups Dada's Icing Sugar
2 T Dada's Cocoa

 

Cream butter and icing sugar until light and fluffy. Add Cocoa. Beat well.

 

A HELPFUL HINT FROM DADIMA

Once cake is baked, allow cooling before removing from pan. If you follow the instructions carefully, you will obtain a very soft texture.
